We recently had a trunk show and my friend served this fruit pizza. Ever since I have been craving it. Call it pregnancy cravings or that it was just that amazing, but either way its a must for all those summer get togethers!
What you'll need:
Sugar Cookie Dough
Fruit of your Choice
1 roll refrigerated sugar cookie dough - May need two for a jelly roll pan
1 (8oz) Cream Cheese - using whipped makes it easier to get a creamy texture
1 (8oz) Cool Whip
1/2 c. Powdered Sugar
Fruit of your choice - strawberries, blueberries, kiwis, bananas, raspberries
1/4 c. Water
1 Tbsp. Corn Starch - may need to use 2 to thicken
1/2 c. Pineapple Juice
1/2 c. Sugar
2 Tbsp. Lemon Juice
Press cookie dough in a jelly roll pan and bake at 350 for 10 to 15 minutes. Cool.
Beat cream cheese, cool whip, powdered sugar together until smooth.
Spread over baked cookie.
Cut up fruit and arrange fruit over top.
Heat glaze ingredients to boiling and boil for 1 minute. Cool to lukewarm and spoon over fruit.
Cut and plate the fruit pizza. A very easy recipe to throw together last minute for a cookout. I just made it last night for family after we decided to grill out on a whim. Always a huge hit with everyone and there's rarely leftovers!
