Cucumber Tomato Salad - Summer Salad ideas

 

Lunch is such a mystery to me. I always say this to my friends, but seriously? What do people eat for lunch. Leftovers? A turkey sandwich? I find when I ask people they don't usually know what they even eat for lunch. So I thought I would share one of my favorite things for lunch. 

When the weather starts to warm up I always crave salads because I like something refreshing and cool! 

I have made this salad probably 1000 times, and I feel like I have finally perfected it.  So I would love to share it with you!

This recipe is so simple I almost feel like it doesn't need instructions! It's perfect for those days where you are looking for something healthy but don't want to spend a lot of prep time. 


Here is what you will need: 

 

1. Apple Cider Vinegar

2. Olive oil

3. English Cucumbers

4. Cherry Tomatoes

5. Red onion

6. Sea Salt 

 

 

 

FIRST STEP: 

Start by slicing the cucumbers thinly, and then halving the red cherry tomatoes. 

Set those in a bowl, and move on to the onion next 

 

SECOND STEP: 

I then start to slice the onion very finely. I slice up only about a couple table spoons worth and throw them into the salad!

 

THIRD STEP: 

Now we are going to add the "dressing". You will do a small dash of the olive oil, and about 2 cap fulls of the Apple cider vinegar. I typically do the vinegar to taste, so if you want it slightly more tart, add as you go so that it doesn't get overly sour. 

Then I mix with a fork until I feel like all of the veggies are evenly coated. Lastly, I add sea salt to taste. 

 

LAST STEP: 

Plate in your favorite pretty bowl and enjoy! I love all of the bright colors. It makes it so fun to eat! This is a healthy and delicious way to keep your waistline trim for the summer!
