Cheesecake Stuffed Strawberries

We’re a little over a week out from the Fourth of July and I’m sure everyone has some sort of idea what they’re going to be doing: what boat they’ll be riding on, beach they’ll be sitting on, lawn they’ll be playing corn hole on, and of course where they’ll be watching the fireworks that evening. In addition, I’m sure everyone has plans to bring a dish or attend a cookout during the day and if so, I have the best, easiest recipe for you!

One of my friends brought these, years ago, to a Fourth of July cookout and I had to have the recipe. Not only are they on Patriotic point with the color, you can pop these into your mouth and they taste like a little bit of strawberry cheesecake heaven. In fact, when I’ve made these for parties, I never go home with leftovers. Anddd one of the best parts about them is that they’re incredibly easy to make. Cheesecake Stuffed Strawberries

1 (8oz) pkg cream cheese

1/2 cup confectioners sugar

1/2 tsp vanilla extract

1 pint fresh strawberries, hulled / cored

3 graham crackers crushed into crumbs

 

Beat cream cheese, confectioners sugar, and vanilla extract in a bowl until smooth. Spoon mixture into a piping bag or a resealable / disposable bag and cut the corner off. Fill cavities of the cored strawberries with cream cheese mixture. Once filled, dip filled side of strawberries in crushed graham crackers to coat.
Voila!
