Let's Talk About Soup
It’s winter in Tennessee and that means it fluctuates between cold weather and rain, rain, rain. I’ve only lived in two places my entire life and that’s the Midwest and the South and I’m here to tell you—I’m not sure what’s worse? Getting heaps of snow, several inches at a time or rain, more rain and dreariness for d a z e .

Well, because of this crazy weather, I’m going to give you all TWO of my favorite soup recipes because, let’s face it: doesn’t everyone need some new ones every now and then? One is cream based and the other is broth based and they’re both insanely easy to make. Introducing: Chicken Cheese Chowder - A Three Sister’s favorite // White Chicken Chili - easy but a goodie.
Chicken Cheese Chowder
1 cup shredded carrot
1/4 cup chopped onion
4 T. butter/margarine
1/4 cup all purpose flour
2 cups milk
13 3/4oz can / 1 3/4 cup chicken broth
1 cup diced cooked chicken / rotisserie chicken
1 T. dry white wine
1/2 tsp. celery seed
1/2 tsp. Worcestershire sauce
1 cup / 4oz shredded sharp or American cheese
In large saucepan, cook carrot and onion in butter until tender nut not brown. Blend in flour, add milk, and chicken broth. Cook and stir until thickened and bubbly. Stir in chicken, wine, celery seed and Worcestershire. Heat through. Add cheese, stir until melted. Garnish with snipped chives if desired.

White Chicken Chili
1/2 rotisserie chicken / cooked chicken
2 cans Northern Beans - do not drain
2 cans petite diced tomatoes - do not drain
14 oz of chicken broth
1 package McCormick’s White Chicken Chili
Put everything in crock pot to simmer on high for four hours or low for six hours. Dish and serve topped with dollop of sour cream, shredded Mexican cheese, cilantro, and green onion. Super easy!
These are my two favorite go to’s because they’re super simple! You can cook your own chicken for each recipe, but I always love the flavor of rotisserie chicken and it’s super easy to prep, if you have the chicken out of the way. So voila! Happy cooking and we hope you enjoy these recipes!
